Training:
The Food Safety Certification course is designed to teach the food service employees all aspects of food safety and sanitation from purchasing and receiving food to serving the customer. Key issues are thoroughly discussed such as how time and temperature abuses, cross-contamination, and poor personal hygiene can lead to foodborne illness. Most importantly, the food service employees will learn how to avoid costly foodborne outbreaks. Other topics include: biological, chemical and physical hazards; proper cleaning and sanitizing; waste and pest management; and the basic principles of HACCP (Hazard Analysis Critical Control Points).
The class format includes lecture/discussion, videos, activities and games to enhance student learning, encourage student participation, and foster an understanding of the importance of serving safe food. Each student is provided with a Food Safety Certification book (in English or Spanish) and a packet of materials related to topics discussed in the course.
Importance of Food Manager Certification:
Every State and local government that has adopted the food manager certification in order to protect public health and prevent foodborne illness. A certificate implies that the person has knowledge of food safety and the prevention of foodborne illness through the control of risk factors. The certified person must be able to apply this knowledge in day-to-day operations in order to provide consumers with safe food.
Responsibility of the Certified Food Manager:
The certified food protection manager is responsible for monitoring and managing all food establishment operations and to ensure that the facility is operating in compliance with food establishment regulations. The certified PIC (Person In Charge) must be knowledgeable about foodborne illness prevention and must use this knowledge to recognize hazards and take appropriate preventive and corrective actions.
In House Food safety Audits:
The food safety audit is an integral part of an establishments food safety /quality assurance program. It's main purpose is to assure that your establishment is in compliance with the most current regulations in the Food Code. It serves to highlight areas in need of improvement that are often overlooked because of heavy work loads. A unannounced internal audit can identify problems before a Board of Health Inspection or a possible Foodborne Illness outbreak can occur.
Each internal audit is detailed with a list of violations (based off of the Food Code) found and comments on overall strengths, weaknesses and areas of improvement that would have the greatest impact on protecting your guest and preventing Health Department violations.
Liaison Services with the Health Department:
In the past if your establishment has been embarrassed by Food Code violations or has had trouble with the health department, I'll help by working with you and the health inspector or Health Department to solve the problems. The solutions could include representation in an official hearing at the health department, certifying additional food service employees and conducting in-house food safety audits that are used as training tools for your establishment and assures compliance with the Food Code for the Health department.
